Crispy Skillet Chicken Thighs
A delicious way to prepare your chicken thighs. The skin will render and become crisp and the green olives and lemon create a Mediterranean flair.

Ingredients

  • (4 thighs) Chicken Thighs
  • (1 tsp each) Kosher salt and black pepper
  • (1 tsp) Paprika
  • (2 Tbsp) Olive Oil
  • (3/4 Cup) Green olives, roughly chopped
  • (1 bulb) Shallot, thinly sliced
  • (1) Lemon, cut in half, with half of it sliced
  • (4 sprigs) Fresh thyme - removed from stems

Directions

  1. Preheat your oven to 475 degrees.
  2. Remove thawed chicken thighs from package and pat dry with a paper towel.
  3. Generously salt and pepper the chicken thighs on both sides. Season them with Paprika.
  4. Put a cast iron (or other heavy bottomed) skillet on the stove and heat over high heat.
  5. Add the oil to the pan and heat it until it is almost smoking (about 375 degrees).
  6. Place the thighs, skin-side-down, in the pan. Cook for 2-3 minutes, then reduce heat to medium.
  7. Continue to cook the chicken for about 8-10 minutes, until the skin is well browned and is becoming crisp and well-rendered. Rotate them in the pan from time to time to make sure they brown evenly on the skin side. Don't worry, there will be some smoke. DO NOT FLIP.
  8. Turn off the heat. Scatter the olives, shallots, lemon slices and thyme over the chicken in the skillet.
  9. Put the skillet of chicken in the oven the monitor the internal temperatures. When the internal thigh temperature reaches 165 degrees, flip the chicken so the pieces are all skin side up. Squeeze the remaining half of lemon into the cracks between the chicken.
  10. Continue to cook the chicken in the oven until it reaches 180 degrees.
  11. Carefully remove the skillet from the oven and serve the chicken, spooning the olives and shallots from the pan onto the individual portions.
