Pork Chops with Chimichurri
A delicious pork chop with a topping of fresh herbs.

Ingredients

  • (2 chops) Pork Loin Chops
  • (1/2 teaspoon) Salt
  • (1/4 teaspoon) Pepper
  • (1 tablespoon) Olive Oil
  • (1 cup packed) Parsley, fresh
  • (1/2 cup) Basil
  • (1/2 cup) Cilantro leaves
  • (1/2 cup) Mint Leaves
  • (3 tablespoons) Red Wine Vinegar
  • (3 cloves) Garlic Cloves, minced
  • (1/2 teaspoon) Oregano, dried
  • (1/4 teaspoon) Crushed Red Pepper Flakes
  • (1/8 teaspoon) Salt
  • (1/8 teaspoon) Pepper
  • (2 tablespoons) Water
  • (2 tablespoons) Olive Oil

Directions

  1. Sprinkle chops with salt and pepper.
  2. Preheat grill for medium-high heat and lightly oil the grate.
  3. Cook the pork chops on the preheated grill until no longer pink in the center, 4-5 minutes per side.  An instant read thermometer inserted into the center should read 145 degrees F.
  4. Place the herbs, vinegar, garlic and seasonings in a small food processor; cover and pulse until chopped.  Add water; cover and process until blended.  While processing, gradually add olive oil into the stream.  Serve with the chops
