Italian Sausage, Farrow, and Tomatoes in One Pot!

Simple one-pot recipe with fresh tomatoes and spinach. Great for a quick summer meal with very little clean up. Tastes even better the next day!
Directions
INGREDIENTS:
1 pound Tierra Verde Farms hot or mild italian sausage (chicken or pork)
1 large yellow onion diced
4 cloves garlic minced
4 cups vegetable or chicken broth
2 cups farro
24 oz cherry tomatoes
1/4 tsp red pepper flakes
salt/pepper
4 oz fresh baby spinach
fresh basil and parmesan cheese for topping
INSTRUCTIONS:
- In a large stockpot, brown the sausage and onions, crumbling while it cooks, until the sausage is browned. Add the garlic and cook for an additional 2 minutes.
- Add the broth, farrow, tomatoes, peper flakes, salt/pepper. Combine and cook until the mixture boils. Then reduce heat to simmer until farrow is tender (20-25 min). Most of the broth should be absorbed.
- Add spinach and toss until spinach is wilted. Adjust seasoning with salt/pepper
- Serve with parmesan cheese
- Calabrian chili paste can kick this up if you like it spicy!
